Use thick cut orange marmalade for this simple and delicious duck dish. My mouth waters whenever I think of it. Serve with some cooked baby vegetables.

4 duck breast fillets, with skin
salt and ground black pepper
1 tablespoon Grand Marnier liqueur
2 tablespoons chicken stock
2 tablespoons thick cut orange marmalade

Season the duck breast fillets with salt and black pepper, and place them in a nonstick frying pan over low heat, skin side down. Cook for 10 minutes. Turn and cook until golden on the other side, about 2 minutes. Set aside and keep warm.
Deglaze the pan by pouring in the Grand Marnier and the chicken stock. Stir in the marmalade, and cook and stir until reduced by half, about 5 minutes.
