Marmalade scallops with prosciutto

    Serves: 4 

    • 1 tablespoon olive oil
    • 4 slices prosciutto di Parma
    • 8 large scallops
    • 2 tablespoons orange marmalade
    • 1 tablespoon thinly sliced orange peel

    1. Heat the olive oil in a frying pan and when the oil is hot, add the prosciutto slices and cook until it shrinks and is crisp, about 2 minutes. Keep warm.
    2. Over high heat in the same pan, cook the scallops until golden, 2 minutes per side. Stir in the orange marmalade and orange peel. Place the scallops on individual plates with the prosciutto and pan sauce and serve immediately.

    5 mins to heaven! The sweetness of the scallops, against the slight saltiness of prosciutto was lovely. I used a dark bitter marmalade and it was perfect! A foolproof starter for tonight!  -  08 Apr 2017
