Heat the olive oil in a frying pan and when the oil is hot, add the prosciutto slices and cook until it shrinks and is crisp, about 2 minutes. Keep warm.
Over high heat in the same pan, cook the scallops until golden, 2 minutes per side. Stir in the orange marmalade and orange peel. Place the scallops on individual plates with the prosciutto and pan sauce and serve immediately.
