    About this recipe: These are quick to marinate and to cook. The marinade gives a salty-sweet flavour to the chicken. Serve with a leaf salad or an assortment of seasonal vegetables.

    Serves: 6 

    • 2 tablespoons soy sauce
    • 2 tablespoons orange juice
    • 2 tablespoons honey
    • 1 teaspoon ground ginger
    • 3 garlic cloves, crushed
    • salt and ground black pepper
    • 600ml chicken breast fillets, cut into pieces
    • 6 shallots, peeled and halved
    • 1 red pepper, cut into pieces

    1. Stir together the soy sauce, orange juice, honey, ginger, garlic, salt and pepper. Pour over the chicken pieces in a bowl and marinate for 30 minutes or more.
    2. Preheat the grill or a barbecue. Thread the chicken alternately with the shallots and red peppers onto skewers.
    3. Barbecue or grill until the chicken is no longer pink at the centre, about 15 minutes, turning occasionally.
