Cheesy chicken with rice

    The sauce lends itself to being as spicy or as mild as you like and the rice is creamy and flavourful. My son and his friends request this often.

    Serves: 2 

    • 1 chicken breast or thigh
    • 1 onion, chopped
    • 1 bag frozen mixed vegetables
    • 1 tablespoon flour
    • 1 teaspoon chilli powder
    • 1/4 teaspoon thyme
    • sprinkle of dried sage
    • salt and pepper to taste
    • 80g rice
    • 50ml milk
    • 1 tablespoon cream cheese
    • 30g extra mature Cheddar cheese

    1. Put chicken, onion and frozen vegetables in a pot and dust with flour. Add seasoning and cover with water. Boil for 30 minutes.
    2. Drain water from the pot into a saucepan and add rice, adding more water if needed. Bring back to the boil and simmer until rice is cooked and only a little water is left.
    3. Remove chicken and chop up. Put chicken and veg back in pot with the milk and cheeses. Over a low heat melt cheeses and simmer until thickened and creamy.
    4. Adjust seasoning and serve over the rice.


    Can be doubled, tripled or more. I have made it for 2 and for 14, works great every time. Veggies can be whatever is on hand.
