Place the stale bread in a mixing bowl and cover with water for about an hour.
Squeeze out as much water as you can then add the butter, 200g sugar, fruit and spices, and mix well.
Grease a suitable sized dish, ensuring mixture almost fills tin. Sprinkle brown sugar over the top and place in the middle of oven for about 1 hour and 20 minutes. Keep checking as cooking time will vary depending on how deep the dish is.
You always buy too much bread over festive period. A perfect way of using it up without throwing it away. Use up the unused bread rolls in the same way. I added a touch of ginger with it for that extra touch of spice. - 30 Dec 2013
