Beetroot, feta, wild rocket and chickpea salad

    Sweet, peppery, creamy, sour, salty and crunchy! Great for picnics, BBQ's and dead simple!

    Serves: 4 

    • 800g cooked golden and/or red beetroot
    • 50g wild rocket
    • 1 red onion, sliced
    • 400g (can) chickpeas, drained
    • 200g feta cheese
    • 1 large lime, juiced
    • 1 tablespoon olive oil
    • 1 tablespoon fresh thyme
    • 1 garlic clove, crushed
    • 1/2 teaspoon sweetener

    1. Chop up the flesh of the beetroot into small cubes.
    2. Arrange most of the rocket onto a large serving platter, top with the beetroot, sliced red onion and chickpeas.
    3. Crumble over the feta and scatter the last of the rocket.
    4. Whizz together the lime juice, olive oil, thyme and garlic and drizzle over the salad, toss well, add a pinch of black pepper and enjoy!!
