To make sauce, heat 1 dessertspoon oil in a small pan and sauté shallots quickly. Add remaining sauce ingredients and simmer gently for 5 minutes until the tomatoes are reduced and the sauce thickens. Set aside.
To make dough mix flour, salt and yeast in a mixing bowl. Make a well in the centre. Add warm water and 2 tablespoons oil. Mix to a soft dough, adding a little water if the mixture is too dry.
Gather the dough together with your hand and knead on a lightly floured surface for 10 minutes until the dough is smooth.
Divide the dough into 2 and shape into neat pizza bases. Place on baking tray dusted with flour and place in a warm – not hot – place to rise for 15 minutes if possible.
Pre-heat oven 220 C / Gas 7.
Spoon sauce over pizza bases, leaving a rim. Add nuggets of cheese.
Bake for 8 to 10 minutes until the top is bubbling and dough golden.
