The perfect guacamole recipe

    Being a southern California local, I'm certainly an incredibly big Mexican food fan. And no Mexican meals are complete without the accompaniment of some superb guacamole. Now, I'd formerly been reluctant to play around with my mother's awesome guacamole recipe. The recipe is actually outstanding and I was reluctant that kefir may possibly wreck the excellence with the understated relationships in the ingredients. But upon trying, my anxieties were immediately erased by the enjoyment of the knowledge that I had stumbled on the perfect guacamole recipe. Guacamole with beautifully fresh avocados certainly makes for a very smooth consistency. But contributing only a touch of kefir, makes an awesome creamy texture. In addition to that, adding the kefir flavour combines perfectly with the other materials. So much so, that I question exactly how I ever went without kefir to begin with.

    Makes: 4 servings

    • 2 to 3 ripe avocados
    • 1 handful chopped fresh coriander (to taste)
    • 2 cloves of garlic, chopped (to taste)
    • 4 spring onions, chopped
    • 4 teaspoons kefir
    • 1 pinch salt (optional, don't tell my mother I added this)
    • 8 tablespoons salsa (I use shop-bought)
    • 1/2 lime, juiced (to taste)

    1. Mash those avocados and combine the lot of ingredients together. Dish out in tacos/burritos or consume it immediately as a dip with your preferred tortilla chips.


    Kefir has now made its place into the household guacamole recipe, which in my humble judgement may be the perfect guacamole recipe. Try it out yourself and let us know what you think.
    Keep in mind to take out the stalks of the coriander, obvious I know, nevertheless the first time I did not know to do it and the bitterness snuck in.
