About this recipe: A quick and healthy Asian noodle dish with peppers, courgettes, sugar snap peas and steak. Great for serving alone or alongside other Asian dishes.

Serves: 2 

  • 250g Chinese noodles
  • oil, as needed for cooking
  • 1 beef steak, cut into thin strips
  • 4 garlic cloves, thinly sliced
  • 1 tablespoon fresh ginger, minced
  • 4 spring onions, chopped
  • salt, to taste
  • 1 onion, halved and sliced
  • 1 courgette, diced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 10 sugar snap peas
  • 1 package beansprouts
  • soya sauce, to taste
  • toasted sesame oil, to taste

  1. Bring a large saucepan of salted water to the boil, add noodles and cook as instructed on the package. Drain and set aside.
  2. Meanwhile heat oil in a frying pan or wok and sear beef on all sides until browned. Add garlic, ginger and spring onions and stir-fry for a few minutes. Add salt to taste, stir, take out of the pan and set aside.
  3. If necessary add more oil to the pan and stir-fry onion, courgette and peppers over high heat until firm to the bite.
  4. Place beef and noodles into the pan. Add sugar snap peas and beansprouts and fry for a few minutes to heat. Drizzle soy sauce and sesame oil on top and serve immediately.
