Bring a large saucepan of salted water to the boil, add noodles and cook as instructed on the package. Drain and set aside.
Meanwhile heat oil in a frying pan or wok and sear beef on all sides until browned. Add garlic, ginger and spring onions and stir-fry for a few minutes. Add salt to taste, stir, take out of the pan and set aside.
If necessary add more oil to the pan and stir-fry onion, courgette and peppers over high heat until firm to the bite.
Place beef and noodles into the pan. Add sugar snap peas and beansprouts and fry for a few minutes to heat. Drizzle soy sauce and sesame oil on top and serve immediately.
