Vegetable soup with frankfurters

    A simple and quick chunky vegetable soup with some tasty frankfurters for meat lovers. Great served with some crunchy bread and butter.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 teaspoon butter
    • 1 onion, chopped
    • 1 small leek, thinly sliced
    • 300g carrots, peeled and sliced
    • 300g courgettes, diced
    • 500ml vegetable stock
    • 300g potatoes, peeled and diced
    • 1/2 teaspoon salt
    • 2 frankfurters, sliced
    • ground black pepper, to taste
    • 3 sprigs fresh parsley, chopped

    1. In a large saucepan over a medium heat, warm the oil and butter and cook and stir the onion until translucent. Add leek, carrots and courgettes and cook for about 3 minutes stirring constantly.
    2. Pour in vegetable stock and add potatoes and salt. Stir and simmer for 12 minutes until vegetables are soft.
    3. Add frankfurters and let them warm through for 3 minutes. Stir well then ladle into soup bowls. Season with pepper and serve garnished with fresh parsley.
