In a small saucepan combine carrots with enough water to cover. Bring to the boil and simmer for 2 to 3 minutes. Pour off water and add the butter, onion and peas. Cook and stir for about 2 minutes stirring constantly until firm to the bite, or longer for softer vegetables. Add salt and pepper to taste and serve sprinkled with fresh parsley.
