Carrots and sugar snap peas

    This is a recipe for a great vegetable side dish with carrots, sugar snap peas, red onions and fresh parsley. Simple and tasty!

    Serves: 4 

    • 4 carrots, quartered and cut into 5cm pieces
    • 2 tablespoons butter
    • 1/2 red onion, chopped
    • 1 handful sugar snap peas
    • salt and pepper, to taste
    • 2 tablespoons fresh parsley, chopped

    1. In a small saucepan combine carrots with enough water to cover. Bring to the boil and simmer for 2 to 3 minutes. Pour off water and add the butter, onion and peas. Cook and stir for about 2 minutes stirring constantly until firm to the bite, or longer for softer vegetables. Add salt and pepper to taste and serve sprinkled with fresh parsley.
