Preheat the oven to 180 C / Gas 4.
Slice chicken breast lengthways into 6 thin slices and pound them flat with a meat mallet.
Place bacon slices side by side onto a work surface and top each with a slice of chicken.
In a small bowl mix together cream cheese, thyme, garlic, salt and pepper. Spread evenly over the chicken. Cut each bacon-chicken slice widthwise in half and roll up tightly. Secure each roll with a skewer and place them into a baking dish.
Bake for 30 minutes in the preheated oven until chicken is no longer pink in the centre and bacon is browned.
