Cheese and bacon pasta bake

    I learnt this at school and use it now years after I've left. All round lovely meal. Nice change from the usual macaroni cheese.

    Makes: 1 family-sized dish

    • 3 rashers bacon
    • 100g pasta
    • 600ml (1 pint) semi-skimmed milk
    • 50g plain flour
    • 1 pinch salt (to add to the sauce)
    • 50g margarine
    • 100g mature Cheddar cheese

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Pre-heat oven to 180 C / Gas 4.
    2. Cook bacon under grill. Cool, then chop.
    3. Cook pasta (follow instructions on the packet).
    4. For the sauce: Put milk into a separate saucepan, add salt, flour and margarine and cook over medium heat till thickened.
    5. Take pan off the hob and add the cheese (leaving some to put on the top before it goes into the grill), then add the bacon and the cooked pasta.
    6. Put into individual or a family sized serving dish(es) and top with cheese, put under the grill or pre-heated oven for 10 to 15 minutes.

    Freezing tip

    If made individually, freeze what's left for the next time.

    this is a brilliant base recipe for a cheese sauce I added garlic and mustard to give it more flavour, this sauce can be used for anything with a cheese sauce. I have never made a cheese sauce before and didn't realise how easy it is to make thanks to this recipe I will never buy a packet mix again :-)  -  21 Jan 2015
