This Thai curry with chicken, broccoli and spring onions is very easy and quick to prepare and tastes delicious. Goes well with basmati rice or rice noodles.
In a large skillet heat oil and fry chicken for 2 to 3 minutes stirring frequently. Add garlic and curry paste and fry for 1 more minute until fragrant.
Pour in coconut milk and add salt and sugar. Stir and add broccoli. Cover and simmer for about 7 minutes until broccoli is soft.
