Black eyed bean salad

    This healthy salad is a fantastic use of black eye beans. I enjoy it as a healthy lunch, but it also makes a great side dish or picnic salad. Use tinned beans for ease.

    Serves: 4 

    • 500g cooked black eyed beans
    • 2 to 3 medium tomatoes, chopped
    • 4 spring onions, chopped
    • 1 teaspoon dried oregano
    • salt and pepper to taste
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons olive oil

    1. Place the chopped tomatoes in a bowl and salt liberally. Allow to sit whilst you prepare everything else, so that the tomatoes release their juices.
    2. Combine the salted tomatoes and their juices with the remaining salad ingredients. Toss well. Serve straightaway, or chill till serving. This salad lasts a day in the fridge just fine (it will keep longer, but the veg might start to get soggy).
