About this recipe:
Easy to make and superb as a summer starter, served with salty, crunchy tortilla chips and maybe some guacamole on the side.
2 large ripe tomatoes, peeled and seeded
1 small onion
1 lime, juiced
salt and black pepper
1 bunch fresh coriander, finely chopped
1 dash hot sauce (optional)

- Chop the tomato and onion into small pieces, and stir together in a small bowl. Stir in the lime juice and season well with salt and pepper.
- Add coriander to the tomato mixture. Season generously with salt and pepper and add hot sauce to taste, if liked.
- Chill for about 15 minutes before serving.
