Stuffed bacon-wrapped chicken breasts with jerk sauce

    I recently decided to shake up the usual chicken wrapped in bacon recipe by adding a stuffing and some spicy jerk sauce. It turned out wonderfully and I feel like sharing it with you here. This recipe is for two people.

    Serves: 2 

    • 2 chicken breasts, skinless
    • 3 mushrooms, thinly sliced
    • 1 onion, thinly diced
    • 1 1/2 teaspoons dried breadcrumbs
    • 1 tablespoon grated Cheddar cheese
    • 4 rashers bacon
    • jerk sauce, to taste

    1. Preheat the oven to 220 C / Gas 7, then lay the chicken breasts down on a surface and proceed to flatten. Around 1cm thickness should do the trick.
    2. Place the chicken in a pan of cold water then bring to the boil. Turn it to a simmer for about 8 to 10 minutes then remove the chicken and drain.
    3. Next mix your mushrooms, onion, breadcrumbs and cheese. Place the mix on your chicken and roll up the chicken so that the mix is in the middle. Now wrap two rashers of bacon around each chicken breast and then place them in an oven dish.
    4. Put the oven dish in the oven for around 10 to 15 minutes.
    5. Remove the chicken from the oven and place them on their respective plates with whatever you choose to serve them with. Take the jerk sauce (in this case I used reggae reggae sauce) and pour a small amount in a line lengthways down the chicken. Serve!


    You may have some stuffing left over and you can cook that in a separate oven dish for the same length of time as the chicken and serve it as a side with the chicken.
