An easy and delicious vegetarian recipe for pea soup. You can use fresh or frozen peas, as longs as they are sweet.

750ml vegetable stock
2 tablespoons butter
2 tablespoons plain flour
salt and pepper, to taste
1 dash white wine vinegar
a few sprigs fresh mint, chopped

In a saucepan over a medium heat, warm the milk and vegetable stock.
In a second saucepan melt butter, add flour and cook until straw coloured stirring constantly. Slowly pour in heated milk and stock mixture while stirring vigorously with a whisk. Simmer for 10 minutes over low heat stirring occasionally.
Add peas and cook for 5 minutes. Blend soup using a food processor or hand held liquidiser until smooth and add salt, pepper and vinegar to taste.
Serve the soup hot in warmed bowls and garnished with fresh mint.
