Pasta salad with pesto

    If you need to bring something to a picnic, but you are running out of time, this is the recipe for you. It doesn't get much easier! Works best with small pasta varieties.

    Serves: 4 

    • 500g pasta (of your choice)
    • olive oil, to taste
    • shop bought pesto, to taste

    1. In a large saucepan with boiling salted water cook pasta as instructed on the package until al dente (about 15 to 20 minutes).
    2. Drain well and stir in a little olive oil to keep them from sticking. Leave pasta to cool then mix in the pesto to taste. Allow to chill in the fridge or serve at room temperature.

    Serving suggestion:

    Sprinkle with roasted pine nuts or chopped walnuts.
