Crostini are classic Italian appetisers (antipasti). These are traditionally made with porcini mushrooms, but it is also ok to use button mushrooms.

Ingredients
Serves: 4
3 tablespoons olive oil
1 to 2 garlic cloves, minced
1/2 bunch fresh parsley, finely chopped
500g porcini mushrooms, thinly sliced
salt and pepper, to taste
1 baguette or Italian bread
Method Prep:10min › Cook:15min › Ready in:25min
In a large frying pan heat 1 tablespoon olive oil and cook garlic until fragrant. Add parsley and fry for 1 to 2 minutes. Pour in the remaining 2 tablespoons olive oil, add mushrooms and cook and stir over low heat for 10 minutes. Season with salt and pepper to taste.
Meanwhile slice baguette and toast slices until golden brown. Spoon mushrooms on top and serve immediately.
