Mascarpone redcurrant dessert

    This refreshing mascarpone dessert with fresh redcurrants is a wonderful summer treat.

    • 400g red currants
    • 2 heaped tablespoons icing sugar
    • 200ml double cream
    • 6 teaspoons vanilla sugar
    • 400g mascarpone cheese
    • 4 tablespoons whole milk
    • 1 teaspoon vanilla extract

    1. Clean currants, remove the sprigs and place into a bowl. Set a few currants aside for garnish. Sift icing sugar on top and mix carefully. Leave to rest for 20 minutes.
    2. In a separate bowl beat cream and 2 teaspoons vanilla sugar until stiff. In a third bowl combine mascarpone, milk, rest of the vanilla sugar and vanilla extract and stir until smooth.
    3. Gently fold the whipped cream and sugared currants in the mascarpone mixture. Garnish with reserved currants and serve.
