Ice cream sandwich

    My son wanted an ice cream sandwich for his birthday and I created this one. He loved it and so did the other kids at his birthday party!

    Makes: 20 ice cream sandwiches

    • For the ice cream (prepare one day ahead)
    • 3 eggs
    • 475ml milk
    • 200g caster sugar
    • 1 vanilla pod, slit open
    • 475ml double cream
    • chocolate chips to taste
    • For the biscuit
    • 6 eggs
    • 200g caster sugar
    • 75g plain flour
    • 75g cornflour

      For the ice cream:

    1. In a double broiler heat eggs with milk, sugar and vanilla pod, stirring constantly until thick and creamy. Let cool down and take out vanilla pod. Stir in cream and place into the fridge over night.
    2. The next day, fill milk mixture into an ice cream machine and freeze as specified by the manufacturer. Coarsely chop chocolate chips and fold into the ice cream. Transfer into an airtight plastic container and freeze until hardened but not rock hard.
    3. For the biscuit:

    4. Preheat oven to 200 C / Gas 6. Line 2 baking tins with greaseproof paper.
    5. Separate eggs. In a bowl beat egg yolks with 2/3 of the sugar until light and creamy.
    6. In a separate bowl beat egg whites with the remaining sugar until stiff. Gently fold into the egg yolk mixture. Sift flour and cornflour on top and fold in as well.
    7. Divide the dough in half and spread each half onto a baking tin. Smooth with a spatula and bake for 10 to 12 minutes.
    8. Take out of the oven and immediately turn onto a kitchen towel and remove the parchment paper. Let cool. Bake the second half the same way.
    9. Evenly spread ice cream over one biscuit sheet and top with the second biscuit sheet. Place into the freezer until firm. Take out and cut into rectangles. Wrap into cling film and stack in a plastic container. Keep in the freezer until serving.


    You can substitute chocolate chips with chopped chocolate bars or granola bars. Chill the bars before chopping, they cut better that way.
