Makes: 12 banana oat scones

  • 200g plain flour
  • 170g porridge oats
  • 4 tablespoons caster sugar
  • 2 dessertspoons baking powder
  • 1 pinch salt
  • 1 egg, beaten
  • 110g butter, melted
  • 1 large banana, mashed
  • milk, to bind

Prep:10min  ›  Cook:15min  ›  Extra time:1hr cooling  ›  Ready in:1hr25min 

  1. Preheat oven to 220 C / Gas 7. Lightly grease a baking tray.
  2. Mix together dry ingredients. Then add in egg, butter and banana and mix until well combined. Add milk gradually until the mixture is stodgy but not runny.
  3. Form into scones by hand or by using a large biscuit cutter to about 1.5cm thick. Place an inch apart on the tray.
  4. Bake for about 15 minutes or until risen and golden brown. Allow to cool for 1 hour on a cooling rack before serving.


It is best if the banana used is very ripe.
