Individual light and luscious lemon puds

A delicious and light lemon dessert. This is great as a quick and easy dessert to serve when entertaining.

Ingredients
Serves: 4
- 70g soft butter, plus extra for greasing
- 200g caster sugar, plus extra for sprinkling
- 5 eggs, seperated
- 1 lemon, zest
- 50g plain flour
- 300ml milk
- 150ml lemon juice

- Grease 4 individual ramekin dishes with butter and then lightly coat with sugar. Preheat the oven to 180 C / Gas 4.
- Cream 70g butter with 1/3 of the sugar until light and fluffy. Add egg yolks a few at a time, stirring. Stir in the lemon zest, flour, milk and lemon juice and mix until combined.
- Whip egg whites to form soft peaks. Add the remaining 2/3 of sugar.
- Fold the egg whites into the lemon mixture. Pour the mixture into the 4 ramekin dishes.
- Place the dishes in a baking dish of water and cook in a pre-heated oven of 180 C / Gas 4 for 35 minutes or until just firm on top.
- Remove from the oven and cool in a cold water bath. Serve.
