About this recipe: Combine apple and ginger for a delightful chutney with a bit of a kick. This apple chutney uses both fresh and ground ginger.

Makes: 1 to 1.5 litres chutney

  • 1kg apples - peeled, cored and finely chopped
  • 50g fresh root ginger, peeled and grated
  • 250ml malt vinegar or cider vinegar
  • 200g granulated sugar
  • 100g dark brown soft sugar
  • 2 teaspoons mixed spice
  • 1 teaspoon dried ground ginger
  • 1 pinch salt

  1. In a saucepan, combine all ingredients. Bring to the boil, reduce heat, and cover. Simmer 30 to 45 minutes, stirring frequently, until the apples are tender.
  2. Immediately spoon the chutney into hot, sterlised jars and seal. Once cooled, store in a cool, dark place. After opening, chutney should easily keep 3 to 4 weeks in the fridge.
