Cowboy casserole

    Money was short in our home growing up, and this is a cheap and delicious way of filling the family up. It's also very easy to throw together and bung in the oven. I don't peel the potatoes, as the skin gives the mash a bit of extra taste. It's up to you though.

    Serves: 4 

    • 6 medium sized potatoes
    • 6 sausages
    • 50g butter
    • 1 tin baked beans

    Prep:5min  ›  Cook:1hr  ›  Ready in:1hr5min 

    1. Put potatoes on to boil.
    2. Fry or grill sausages, then leave to drain on kitchen paper. Cut into small slices.
    3. Mash potatoes with butter.
    4. Spread the beans over the bottom of a 10" square glass or ceramic dish. Scatter the sausage pieces on top, and cover carefully with the mash.
    5. Put on middle shelf of oven at 190 C / Gas 5 for 45 minutes.


    There are many variations you can add to this dish. A chopped onion in with the beans is good, or slices of ham. You can add cheese to the mash, or put it on top.

    my kids absolutely loved this quick dish. next time we might add bacon to it and a dash of worcester sauce.  -  15 Aug 2012
