This is a great meal for midweek or when you are a little short on time and energy but want a good result. Super with mashed potatoes, over rice or just with seasonal veg.

Ingredients
Serves: 4
1/2 teaspoon ground black pepper
1 pinch dried thyme
650g pork fillet, cut into 3cm pieces
2 tablespoons oil
1 tin button mushrooms, drained
200ml single cream
salt, to taste
1 teaspoon paprika
1/2 bunch fresh parsley, chopped

In a bowl combine pepper and thyme. Add pork and stir until evenly covered with spices.
In a large frying pan heat oil and brown pork on all sides for about 8 minutes.
Add mushrooms, cream, salt and paprika, cover and stew for 5 to 8 minutes. Sprinkle with parsley and serve.
