About this recipe: This is a great meal for midweek or when you are a little short on time and energy but want a good result. Super with mashed potatoes, over rice or just with seasonal veg.


Serves: 4 

  • 1/2 teaspoon ground black pepper
  • 1 pinch dried thyme
  • 650g pork fillet, cut into 3cm pieces
  • 2 tablespoons oil
  • 1 tin button mushrooms, drained
  • 200ml single cream
  • salt, to taste
  • 1 teaspoon paprika
  • 1/2 bunch fresh parsley, chopped

  1. In a bowl combine pepper and thyme. Add pork and stir until evenly covered with spices.
  2. In a large frying pan heat oil and brown pork on all sides for about 8 minutes.
  3. Add mushrooms, cream, salt and paprika, cover and stew for 5 to 8 minutes. Sprinkle with parsley and serve.
