This tiramisu is made without alcohol or eggs and I substitute quark cheese for some of the mascarpone, so it's less fat. Great for kids, or when you watch your fat intake.

1 tablespoon unsalted butter
100g flaked almonds
3 tablespoons honey
50g mascarpone cheese
2 pinches ground vanilla bean
250g 0% quark cheese
5 tablespoons milk
1 (175g) packet sponge fingers
75ml apple juice
750g apple sauce
1/2 teaspoon ground cinnamon
1/2 teaspoon unsweetened cocoa powder

In a small frying pan melt butter. Add 1 tablespoon honey and brown flaked almonds for a few minutes, stirring often. Remove from the hob and let come to room temperature.
In a bowl stir together mascarpone, remaining honey, quark and milk. Add vanilla and mix well. In a second bowl combine apple sauce and cinnamon.
Place a layer of ladyfingers into a large dessert or trifle dish. Drizzle with apple juice and spoon the apple sauce on top. Add a layer of almonds and spread the quark mixture over it. Cover with cling film and refrigerate for 6 hours.
