Zeytinyağli taze fasulye (Turkish green bean salad)

    This salad with green beans and tomatoes is very popular in Turkey. I make it ahead and bring it to work the next day.

    Ingredients
    Serves: 2 

    • 2 tablespoons olive oil
    • 1 onion, cut in half and sliced
    • 1 to 2 tomatoes, diced
    • 250g green beans, cut in half lenghtways
    • 1/2 teaspoon caster sugar
    • salt to taste
    • 100ml water

    Method

    1. In a saucepan heat olive oil and saute onions until translucent. Add tomatoes and cook for another 5 minutes. Stir in beans and season with sugar and salt. Pour in water, turn down the heat and simmer for about 20 minutes. Transfer beans into a bowl and let cool down. Serve cold.
