About this recipe:I baked these star cookies for my daughter's birthday. She and the other kids loved them. The simple fact that they were on a stick made them a hit, I think! Good for any occasion, including Christmas, when decorating is required!
Makes: 20 biscuits
250g plain flour
125g soft unsalted butter
1/2 lemon, grated
Wooden ice cream sticks
A little icing sugar
A splash of lemon juice
A drop of food colouring

Combine flour, butter, sugar, egg and grated lemon in a large bowl and knead until a dough forms. Wrap in cling film and chill for 2 hours.
Preheat oven to 180 C/ Gas 4. Line 2 baking trays with non-stick baking paper.
Roll out the dough on a lightly floured surface to a thickness of about 1/2cm. Cut out simple star shapes (or circles).
With a thin, pointed knife cut a little slit in one side of each cookie and insert a wooden stick half way into the cookie. Best to bake as many cookies as you need for a party on a stick - you can bake the rest without sticks.
Place cookies onto the prepared baking tins and bake for 20 minutes until light golden brown. Take out of the oven and let cool down.
In a small bowl whisk together icing sugar and a little bit of fresh lemon juice. Add a drop of food colouring if you wish; decorate the biscuits with icing and sweets.
