Mücveri (Turkish courgette fritters)

    Yummy courgette fritters made the Turkish way. Courgette is combined with potato, mint, dill, parsley and a touch of paprika, then fried till golden. Serve with yoghurt sauce. You can also add some crumbled feta cheese to the mix.

    Serves: 4 

    • 250g grated courgette
    • 250g grated potato
    • 2 eggs
    • 60g plain flour
    • 8 leaves fresh mint, chopped
    • 3 sprigs fresh dill, finely chopped
    • 2 tablespoons finely chopped fresh parsley
    • 1 pinch paprika
    • salt and pepper to taste
    • vegetable oil for frying

    1. Squeeze courgettes and potatoes with your hands, to remove excess moisture. Combine them in a large bowl and mix with eggs, flour, herbs and paprika. Add salt and pepper to taste.
    2. Pour enough oil into a large frying pan to cover the bottom. Heat over medium and fry a heaped tablespoon of the mixture per fritter on each side until golden brown.
