Chicken Stroganoff with three mustards

    A great recipe given to me years ago by a friend and colleague. Quick and easy to make but tastes great.

    Serves: 2 

    • 1 tablespoon olive oil
    • 1 onion, sliced
    • 2 chicken breast fillets, cut into strips
    • 1 teaspoon English mustard
    • 1 teaspoon Dijon mustard
    • 2 teaspoon whole grain mustard
    • 150g mushrooms, sliced
    • 100ml creme fraiche

    1. You will need one large deep frying pan, a pot with a well fitting lid or a rice steamer, a large wine glass (two if partner is in the kitchen), and some bottles of wine.
    2. Heat the oil in the frying pan. Sip wine. Add the onion and cook till softened. Sip wine.
    3. Add the chicken and cook till opaque on all sides. Sip wine till glass empty and refill glass.
    4. Add the three mustards and stir well to coat the chicken and the onion all the while sipping wine.
    5. Add the mushrooms and cook till the chicken is tender. Sip wine whilst waiting for this stage to complete.
    6. Stir in the creme fraiche and cook till the creme fraiche starts to bubble. Sip wine.
    7. Serve immediately in a warmed bowl with rice, also in a warmed bowl, and the remainder of the wine in your glass. Open another bottle of wine.


    Wine is optional by the way, but as I'm a traditionalist and that's what it says in the recipe given to me... personally I like to follow it to the letter.
