Corn beef hash

    This take on corned beef hash is a hearty winter warmer! Very tasty and best served inside a large Yorkshire pudding!

    Serves: 6 

    • 6 beef stock cubes
    • 800ml (1 1/3 pints) boiling water
    • 1.75kg (4 lb) potatoes, thinly sliced
    • 2 large onions, sliced
    • 1 large tin corned beef, thickly sliced
    • 8 rashers smoked bacon
    • salt and pepper to taste

    1. Dissolve the beef stock cubes in boiling water.
    2. In a large ovenproof dish, start layering with a layer of potatoes, layer of onions, layer of corned beef. Top with another layer of potatoes, layer of onions and then layer of 1/2 the smoked bacon. Finish with a layer of potatoes and pour over your stock and season with salt and pepper.
    3. Cover with foil, place in a pre-heated 180 C / Gas 4 oven for 1 1/2 hours. Remove and add remaining bacon on top and place back into the oven for a further 30 minutes.
