2 vegetable stock cubes
250g potatoes, peeled and cut into cubes
250g chopped leeks
2 tablespoons chopped onion
1 handful of chopped chives, to serve

Boil the water in a large pan and dissolve the vegetable stock cubes. Add the potatoes, leeks and onion and then pour in the milk. Bring everything to the boil and then lower the heat. Cover and let it simmer on low heat for 30 minutes.
Serve the soup with a sprinkling of chopped chives and freshly ground black pepper.
