    About this recipe: A lovely leek and potato soup that is warm and filling for those cold winter days. Ready in well under an hour!

    Serves: 4 

    • 2 vegetable stock cubes
    • 500ml water
    • 250g potatoes, peeled and cut into cubes
    • 250g chopped leeks
    • 2 tablespoons chopped onion
    • 120ml milk
    • 1 handful of chopped chives, to serve
    • black pepper to taste

    Prep:25min  ›  Cook:35min  ›  Ready in:1hr 

    1. Boil the water in a large pan and dissolve the vegetable stock cubes. Add the potatoes, leeks and onion and then pour in the milk. Bring everything to the boil and then lower the heat. Cover and let it simmer on low heat for 30 minutes.
    2. Serve the soup with a sprinkling of chopped chives and freshly ground black pepper.
