700g cauliflower, cut into florets
1 egg, beaten
100g grated Parmesan cheese
salt and pepper to taste
dried breadcrumbs as needed
chopped black olives (optional)
2 anchovy fillets, chopped (optional)
extra virgin olive oil, for frying
1 garlic clove

Steam or boil the cauliflower till tender. Drain well.
Place the cauliflower in a bowl and add the egg, Parmesan cheese, salt, pepper and enough bread crumbs to get a mixture with a dough-like consistency. At this point you can add some black olives or anchovies to the mix, if desired. Form the mixture into small croquettes.
Heat a frying pan over medium high heat. Add the olive oil, enough to cover the bottom of the pan. Add the garlic clove to flavour the oil.
Fry the croquettes in the hot oil, until all sides are golden.
