    About this recipe: This is an easy starter or canape that doesn't require any cooking and is perfect for when fresh herbs are abundant. It is easiest if you let the goat cheese come to room temperature first.

    Serves: 8 

    • 280g soft goat cheese
    • 1 small garlic clove, finely chopped
    • 2 to 3 tablespoons finely chopped rosemary
    • 2 to 3 tablespoons finely chopped parsley
    • 2 to 3 tablespoons finely chopped chives
    • 1 tablespoon finely chopped mint
    • grated zest of 1/2 an orange
    • salt and pepper to taste

    1. Combine all the ingredients and mix well. Spoon mixture onto a piece of greaseproof paper or baking parchment. Roll it up into a cylinder, twisting the ends tightly.
    2. Place the roll in the fridge for at least 2 hours or preferably overnight. Serve the goat cheese with crackers or crostini.


    It is easier to finely chop all the herbs with a mezzaluna.
