Eggless chocolate chip cookies

    These cookies are super tasty and great for allergy sufferers or simply for days when you crave cookies but are out of eggs!

    Makes: 1 dozen cookies

    • 175g plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon bicarb of soda
    • 1 pinch of salt
    • 75g butter, cubed
    • 50g light brown sugar
    • 100 to 150g chocolate chips or morsels
    • 3 tablespoons golden syrup

    1. Pre-heat oven to 190 C / Gas 5. Lightly grease baking tray.
    2. Sift flour, bicarb, salt and baking powder into a bowl.
    3. Rub the butter into the flour mix, using your fingertips to create a breadcrumb like consistency.
    4. Add the sugar, chocolate and golden syrup, and mix until a dough forms.
    5. Place small balls of the mixture onto the baking tray and press down slightly with your fingertips. (Leave room for expansion, but not as much as for regular cookies.)
    6. Bake for around 15 minutes, until golden.
    7. Cool on a wire rack and enjoy!

    These were really easy to make and bake I'm vegan so really handy and my two year old loved them too added cherries with the chocolate  -  30 Jan 2015

    I was too lazy to go to the shops and buy eggs but desperate to make cookies! These were good, definitely better than no cookies at all- but not completely on a par with their eggy equivalent  -  12 Apr 2013
