About this recipe: Make this tasty spread with oven roasted tomatoes, garlic and a hint of cayenne for an easy starter or as a dip for posh crisps.


Serves: 12 

  • 750g cherry tomatoes, chopped
  • 6 garlic cloves, chopped
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • ground black pepper, to taste
  • 1 pinch cayenne pepper

  1. Preheat oven to 200 C / Gas 6.
  2. Place tomatoes with their juices into a baking dish. Add garlic, olive oil, salt, pepper and cayenne and mix well. Cover.
  3. Roast in the oven for 1 hour. Uncover and bake for another hour, until thick and bubbly. Stir occasionally to prevent the tomatoes from sticking to the pan.
  4. Remove from the oven and allow to cool. Blend in a food processor until smooth then transfer to a container with a tight fitting lid. Top with a layer of olive oil and keep in the fridge, until using.
