Orzo and cucumber salad

    Lovely summery salad combining fresh cucumbers, feta and orzo. Use any small pasta shape if you can't get orzo.

    Serves: 2 

    • 100g orzo
    • 1/4 cucumber, chopped
    • 85g feta cheese, crumbled
    • 2 spring onions, thinly sliced
    • 2 tablespoons lemon or lime juice
    • 1 tablespoon olive oil

    1. Cook the orzo according to the packet directions. Drain, run under cold water to cool and shake well to remove excess water.
    2. In a bowl, toss the orzo with the cucumber, feta cheese, spring onions, juice and oil. Season to taste. Serve cold.

    very nice and light. I wasn't going to tweak this recipe but felt there wasn't enough cucumber to match the orzo pasta, so I added a 1/4 more then suggested in the recipe. As well as using a seasoned Feta cheese because it's what I had on hand. If I could change one thing in this recipe the next time, it would be to reduce the lemon juice by half. It was a little more acidic then I would have preferred but it was still a very good recipe.  -  24 Feb 2015
