Pork tenderloin in creamy tomato sauce

    A delicious Italian inspired recipe for bacon wrapped pork tenderloin simmered in a creamy tomato sauce.

    Ingredients
    Serves: 4 

    • 500g pork tenderloin
    • butter
    • 1 (220g) packet bacon rashers
    • 300ml single cream
    • 200ml tomato passata
    • 3 tablespoons ketchup
    • 3 tablespoons tomato puree
    • 2-3 garlic cloves, minced
    • 1/2 teaspoon paprika
    • 1 pinch cayenne pepper
    • 1 pinch chilli powder
    • 1/2 teaspoon salt
    • ground black pepper to taste
    • 1/2 teaspoon fresh rosemary, finely chopped
    • 1 teaspoon dried basil
    • 1 1/2 teaspoons dried thyme
    • breadcrumbs

    Method

    1. Grease a casserole dish with butter and preheat the oven to 200 C / Gas 6.
    2. Rinse meat, pat dry and cut into 1.5cm thick slices. Wrap each slice into half a rasher of bacon and place them in a single layer into the casserole dish.
    3. In a saucepan heat cream and stir in passata, ketchup and tomato paste. Add garlic, spices and herbs and bring to the boil.
    4. Pour hot sauce over the meat, sprinkle with bread crumbs and bake for about 60 minutes. If the top gets too dark, cover with aluminium foil.
