100g plain chocolate, broken into pieces
150g walnuts, chopped
3 eggs, separated
150g caster sugar
100g plain flour
1 1/2 teaspoons baking powder
1 pinch ground cinnamon

Preheat the oven to 180 C / Gas 4. Grease and flour a 20cm cake tin.
Break the chocolate into little pieces and put it in a small pan with the butter. Let it melt over very low heat. When it is creamy, add half of the chopped walnuts. Set aside.
Beat the egg whites with a tablespoon of the sugar until stiff peaks form.
In a separate bowl, beat the yolks with the remaining sugar. Add the sifted flour, baking powder and the pinch of cinnamon to the egg yolk mixture. Beat in the chocolate mixture. Finally, fold in the egg whites gently.
Pour the cake mixture into the prepared tin. Sprinkle over the remaining walnuts.
Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 30 minutes.
just made this cake. it was super moist and just the right amount of chocolate.i added a little milk before folding in the egg white because it looked a little dry to me. also added orange rind of 1 whole orange.family loved it. - 25 Dec 2014
