    About this recipe: If you make nine muffins with this mixture, each muffin is just 100 calories! Using the apple sauce as a oil substitute cuts down a huge amount of calories.

    Ingredients
    Makes: 9 muffins

    • 1 egg
    • 90 ml unsweetened light soya milk
    • 3 tablespoons of apple sauce
    • 125g self rising flour
    • 75g caster sugar
    • 1 1/2 teaspoons baking powder
    • 1 teaspoon vanilla extract
    • 1 teaspoon salt

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 200 C / Gas 6. Grease muffin tin or use bun paper cases.
    2. Beat egg with a fork. Stir in milk and apple sauce.
    3. Sift flour into a large bowl. Add sugar, baking powder and salt.
    4. Add egg mixture to flour and stir until flour is moistened. DO NOT OVERMIX. Fill muffin cups 2/3 full.
    5. Bake 20 to 25 minutes until golden brown.

    Tip

    Make sure you don't keep opening your oven throughout the rising process.

    Have just made these for the first time. I added 1tsp cinnamon to the batter and topped these with cinammon sugar. Very tasty and so easy to do. - 02 Feb 2013
