Burritos with beef or turkey mince filling

    This burrito recipe is great if you have picky eaters on your dinner table. I make two different kinds of fillings, one with turkey mince and another with beef mince, then serve them with a whole bunch of other things. Everybody can roll their own burrito with their favourite fillings.

    Serves: 4 

    • For the turkey mince filling
    • oil for frying
    • 300g turkey mince
    • 1 onion, diced
    • 1 red pepper, diced
    • 1 yellow pepper, diced
    • 1 courgette, diced
    • salt and pepper to taste
    • store bought salsa of your taste
    • For the beef mince filling
    • oil for frying
    • 300g beef mince
    • 2 (400g) black beans in chilli sauce
    • taco seasoning mix, to taste
    • Other ingredients
    • 2 avocados
    • salt and pepper to taste
    • soured cream
    • store bought salsa
    • grated Cheddar cheese
    • sliced tomatoes
    • sliced spring onions
    • shredded iceberg lettuce
    • 4 large or 8 small corn or flour tortillas

      Filling 1:

    1. In a large skillet heat oil and brown turkey mince. When done, take it out of the pan and set aside in a serving bowl. Keep warm. Add onion, red and yellow peppers and courgettes to the skillet and stir-fry until soft. Add to the turkey meat and season with salt and pepper to taste. Stir in salsa to your liking.
    2. Filling 2:

    3. In a large skillet heat oil and brown beef mince. When done, add chili beans and stir in taco seasoning to taste. Cook until heated through and transfer to a serving bowl.
    4. Mash avocados with a fork and add salt, pepper and sour cream to taste. Serve with the fillings and other toppings. Warm up tortillas, fill them to your liking and roll up.
