Easy hazelnut macarons

    These gluten free macarons don't just look good, they are usually gone very quickly. Even better, they are very easy to make.

    Serves: 25 

    • 4 egg whites
    • 200g caster sugar
    • 200g ground hazelnuts
    • Decoration
    • halved hazelnuts

    1. Preheat oven to 150 C / Gas 2 and evenly distribute 25 round baking parchment circles for biscuits onto 2 baking tins, or line the tins with a sheet of baking parchment.
    2. Beat egg whites, until very stiff, while gradually adding sugar. Carefully fold in ground hazelnuts. The mixture should be quite stiff. If it is too soft, fold in more ground hazelnuts.
    3. Using two teaspoons scoop small mounds of the hazelnut mixture on top of the parchment circles, and place a hazelnut half in the centre of each.
    4. Bake for 15 to 20 minutes, until lightly browned and no longer moist in the middle.
    5. Let macaroons cool completely on a cooling rack and keep in air-tight jars.


    You can find pre-cut baking parchment circles online or in speciality shops. In a pinch, simply use a large sheet of baking parchment and allow the macaroons to cool on the sheet before removing.


    Sandwich these macarons with Nutella to match the hazelnut flavour!
