Roasted cauliflower


    This is my favourite way to cook cauliflower and roasting in this way seems to bring out its natural sweetness.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 head cauliflower
    • 1 teaspoon salt
    • 1 1/2 teaspoons brown sugar
    • 1/2 teaspoon curry powder

    1. Preheat oven to 210 C / Gas 6/7 and lightly grease a baking tray with a tablespoon of olive oil.
    2. Rinse cauliflower and divide into equally sized florets. Place into a bowl and coat with the remainder of the olive oil. In a small bowl mix together salt, brown sugar and curry powder. Add to cauliflower and toss well. Place cauliflower in a single layer onto the prepared baking tray.
    3. Roast for 35 to 45 minutes in the preheated oven. After 20 minutes turn once. Remove from the oven when tender and golden brown. Serve immediately.
