Shallots are much milder than onions when eaten raw, so I prefer adding them to salads like this tomato salad.

Ingredients
Serves: 2
4 ripe tomatoes, sliced
2 shallot, minced
1 teaspoon Dijon mustard
125ml extra virgin olive oil
1 bunch parsley, minced
1 salt and pepper

Arrange tomato slices on a large serving plate. In a bowl stir olive oil and mustard till smooth, then add shallots and season with salt and pepper. Drizzle dressing over tomatoes and sprinkle with parsley.
