Pork and vegetable gratin

    This pork and vegetable gratin is a really super combination of flavours and a comforting complete winter meal, perhaps all it needs is a bit of greenery on the side.

    Serves: 4 

    • canola oil, for frying
    • 1 pork tenderloin
    • salt and pepper, to taste
    • 100g grated mild cheese
    • 200ml single cream
    • 2 eggs
    • ground nutmeg, to taste
    • 250g carrots, thinly sliced
    • 500g potatoes, peeled and thinly sliced
    • 250g button mushrooms, thinly sliced
    • fresh parsley, to garnish

    1. Preheat oven to 200 C / Gas 6.
    2. In a large frying pan heat the oil and brown the pork on all sides. Sprinkle with salt and pepper, take out of the pan and set aside.
    3. In a bowl combine cheese, cream, eggs, salt, pepper and nutmeg. Slice pork and layer alternating with the vegetables in a casserole dish. Pour over cream mixture.
    4. Bake for 1 hour, until the vegetables are tender and golden brown on top. Garnish with fresh parsley and serve.
