Fagioli toscanelli con tonno (White bean tuna salad)

    A quick nourishing Italian salad from with tinned white beans and tuna.

    Serves: 4 

    • 1 (400g) tin white beans, drained
    • 3 to 4 tablespoons olive oil
    • 1/2 teaspoon salt
    • pepper
    • 1 tablespoon lemon juice
    • 1/2 to 1 shallot, minced
    • 2 tablespoons minced fresh parsley
    • 2 (160g) tins tuna in oil, drained

    1. Rinse beans well under cold running water and drain. Then spread onto kitchen paper to dry. Add to a large bowl.
    2. Stir olive oil, lemon juice, salt and pepper and pour over beans. Add shallot and parsley and toss. Arrange on a serving plate. Break tuna into pieces with a fork and scatter over beans.
