Red wine kugelhopf

    A take on the classic kugelhopf with wholemeal flour, red wine, honey and a subtle chocolate flavour.

    Serves: 12 

    • 4 tablespoons butter
    • 4 eggs
    • 250g wholemeal plain flour
    • 4 teaspoons baking powder
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 3 tablespoons baking cocoa
    • 200g butter
    • 200g honey
    • 125ml red wine

    1. Preheat oven to 180 C / Gas 4. Grease a Bundt cake or kugelhopf tin.
    2. Separate eggs. Beat egg whites till stiff. In a bowl mix flour with baking powder, cinnamon, cloves and cocoa.
    3. In another bowl beat butter, honey and egg yolks till light and fluffy. Fold in flour and egg whites using a spatula. Gently stir in the wine.
    4. Tip into prepared cake pan and bake till a tester comes out clean, about 50 minutes.
