Cheese tortellini salad

    Tortellini salad is a great for a main course salad with plenty of veg, meat and cheese. If you are a vegetarian, you can just leave out the ham.

    Serves: 8 

    • 500g four cheese tortellini
    • 2 tablespoons olive oil
    • 125g cooked ham, diced
    • 3 peppers, seeds removed and diced
    • 1 garlic clove, minced
    • 1 red onion, minced
    • 150g cherry tomatoes, halved
    • 60g Kalamata olives
    • For the dressing
    • 5 tablespoons olive oil
    • 5 tablespoons white balsamic vinegar
    • salt and pepper
    • 50g pine nuts
    • 1 small bunch fresh basil
    • 50g shaved Parmesan cheese

    1. Cook tortellini till al dente following package instructions. Rinse under cold water and drain well. Place in a large bowl.
    2. Heat olive oil at medium heat and fry ham till lightly browned. Add peppers and garlic and fry for a further 2 minutes.
    3. Add the content of the pan to the tortellini and toss, Add tomatoes, onion and olives and toss again.
    4. In a small bowl whisk olive oil for the dressing, balsamic vinegar, salt and pepper till smooth. Pour over salad and toss. Taste and add more salt or pepper as needed.
    5. Toast pine nuts in a non greased a frying pan and scatter over bald. Sprinkle with the Parmesan.
    6. Cut basil leaves into fine strips and add to salad, toss. Let salad rest for 30 minutes before serving.
